So You Went, Snow Goose Hunting…..Now What To Do With All That Meat?

Meat Cooler: Snow Goose

One of the best eating migratory birds it the snow goose. Snow geese are vegetarian birds that tend to feed on crop fields. Many of these fields a full of corn, winter clover or soybeans. Birds that feed on a vegetarian diet usually are better to eat. The snow goose produces two large breasts they are perfect for cooking and grilling. We have perfected some of our snow goose recipes and hope to share them with you.

Snow Goose Steaks Ready For Marinade

Snow goose is one of the best species of goose to eat. Each goose produces two delicious breasts that are perfect for cooking and grilling. When cooked, snow goose will challenge even the best steaks. Their dark meat is best-served medium rare and juicy. Like a great steak, the marinade that it is soaked in can make all the difference. Here is how we like to cook our snow goose steaks.

Snow Goose Steaks Ingredients:

  • 1 Lemon (juice only)
  • ½ cup red wine vinegar
  • ½ medium onion, grated
  • 3 garlic cloves, crushed
  • 2 bay leaves
  • 2 tsp. kosher salt
  • 1 tsp. chili paste
  • ½ tsp. dried tarragon
  • ½ tsp. fresh ground black pepper

Directions For Cooking Snow Goose Steaks:1) Soak your snow goose breasts in water with a little salt for at least 24 hours before you place in the marinade.

2) Place all your ingredients in a Ziploc bag. Close the bag with air in it and shake until all ingredients are mixed.

3) Lay snow goose fillets on a cutting board and make sure all bones and fat are removed.

4) Place the snow goose fillers in the Ziploc bag with marinade and place in the fridge. Let the breast soak for a minimum of 4 hours. Typically I will make marinade the night before and let breast soak all night.

5) Preheat grill to around 250 degrees then put the snow goose breast on it.

6) All breast to cook for 20 minutes or until they are medium rare. Medium rare is cooked on the outside and pink in the middle

These snow goose steaks are a great way to cook snow goose. The will not only taste delicious but if they are cooked perfectly to medium rare then it will be so tender and easy to eat. These are great for a family dinner or cooking for friends. This is one recipe you will come back to time and time again everytime you have snow goose in your freezer.

Bacon Wrapped Snow Goose

In my opinion, there is not much you cant combine bacon with that doesn’t make it amazing. How about taking the already great tasting snow goose and marinading it, wrapping it with bacon and grilling it. This makes for a tasty dinner anyone would enjoy.

Snow Goose Wrapped In Bacon

Bacon Wrapped Snow Goose Ingredients:

  • 2 large snow goose breasts
  • 2 branches of fresh rosemary
  • 4 branches of fresh thyme
  • 4 tsp of garlic minced
  • 1/2 cup red wine
  • 1/4 cup olive oil
  • 1 tsp freshly grounded pepper
  • 1/2 tsp salt
  • 1 tsp crush red pepper
  • 1 pack of bacon

7) Cook bacon wrapped breast for 20 minutes or until the bacon is cooked. Once the bacon is cooked it should leave the breasts medium rare with some pink in the middle.

Bacon Wrapped Snow Goose With Corn And Asparagus

With the bacon wrapped around it, it will allow for the snow goose to cook perfectly to medium rare. The bacon will absorb into the breast giving it an exceptional flavor with the marinade that is already on it. This is a dinner that not only tastes great but has an amazing presentation.
